On a whim, stopped at the Lung Fung Chinese Restaurant here in Santiago Chile! The atmosphere and decor were stunning! I have been to China and eaten at many of the most beautiful restaurants in Beijing…., but the Lung Fung takes the prize! Amazing!

I was loath to waste the Brandy Wine Vinegar drippings from the carmelized onions I used for the Onion Dip, so I used them to season some chicken! In addition, I added some of the home-made berries from Isabel (La Serena, Hostal El Arbol)! Some parmesan cheese and presto! Salad Sauce!
I adore Onion Dip, but the crap they are peddling at the Mercado these days is awful! And I have a solution! Take one whole onion and chop into small nibbily bits. Use a quarter cube of butter and carmelize the onions on the stove top. At the end, add brandy wine vinegar and allow… [Read more…]
